Bizcocho vegano de coco y limón con harina de espelta. El aceite de coco ayuda a perder peso y es eficaz para evitar enfermedades cardiovasculares y problemas de tiroides.
En un bol grande, mezcla la harina de espelta, la levadura, la sal marina, el azúcar de coco y la ralladura de limón y resérvalo.
Tritura las semillas de lino hasta que quede una pasta fina. Añade el zumo de manzana, el zumo de limón y la vainilla, y bate hasta conseguir una mezcla suave.
Añade la mezcla anterior y el aceite de coco fundido grande, y remueve hasta que quede todo bien integrado.
Unta el monde para el horno con un aceite de coco, vierte la masa y hornéala durante 30-40 minutos. Pincha el centro con un palillo; si sale limpio significa que ya está cocido.
